
Ingredients
150g anchovies (jar or fresh)
3 cloves garlic squashed
Olive oil, chilli infused (optional)
Red onion thinly sliced
2 bunch broccolini
1 bunch parsley, for garnish
1 lemon, to serve
110g shaved almonds
700g passata
Salt and cracked pepper
Parmesan, to serve
Method
Cook pasta according to packet instructions. Drain and put aside.
Add almonds to a dry pan on medium heat and toast for 2 mins making sure not to burn them. Put aside.
Add oil, garlic, broccolini and onion to a pan on medium heat and cook until slightly wilted.
Add anchovies, stir through and cook for 3 mins.
Add passata, stir through and simmer for 10 mins.
Add the sauce and parsley (leaving some for garnish) to cooked pasta. Stir through until evenly spread.
Serve with almonds, cracked pepper, parmesan, squeeze of lemon and parsley.
