Ingredients
200g cherry tomatoes
1 bunch fresh spinach
1 bunch fresh basil
3 cloves garlic, lightly roasted
100g raw cashews
200ml olive oil
½ lemon squeezed
Parmesan, to serve
Method
Cook pasta according to packet instructions.
Spinach, garlic, basil, olive oil, cashews, salt and pepper into a food processor. Blend until roughly smooth adding extra olive oil to help consistency and salt and pepper to taste.
Cut cherry tomatoes into halves.
Add pesto and cherry tomatoes to your pasta, and stir through thoroughly.
Serve with grated parmesan.
